A Texas Toast Meltdown is a thicker, cheesier spin on a classic patty melt. The thick buttery Texas toast crisps up perfectly on the griddle while the cheese melts into the juicy beef and caramelized onions.
Ingredients
1 lb ground beef (80/20)
4 slices Texas toast
1 large onion, thinly sliced
4 slices Swiss cheese
2 slices American cheese
2 tbsp butter
1 tbsp Girls Gone Grillin’ SPG with a Kiss of Onion
Optional sauce:
¼ cup mayo
2 tbsp ketchup
1 tbsp mustard
1 tsp pickle relish
Instructions
Caramelize the onions
Heat a cast-iron skillet or griddle.
Add butter and onions.
Cook low and slow about 15–20 minutes until golden and soft.
Make the patties
Form ground beef into 2 thin patties shaped to the Texas toast.
Season generously with Girls Gone Grillin’ SPG with a Kiss of Onion.
Cook the beef
Cook patties on a hot griddle about 3–4 minutes per side.
Build the meltdown
Butter the Texas toast.
Place bread butter-side down on the griddle.
Add Swiss cheese → beef patty → caramelized onions → American cheese → top slice of Texas toast.
Grill the sandwich
Cook until bread is golden and crispy and the cheese is melted.
Flip once and press lightly.
Serve
Slice in half and serve with the meltdown sauce or dill pickles.
