Stuffed Zucchini Boats

Perfect for the grill or oven — low carb, cheesy, and packed with flavor. Let’s make them Girls Gone Grillin’ style 

Ingredients

  • 4 medium zucchini
  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ small onion, diced
  • ½ cup marinara sauce
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper (optional)
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • Salt & pepper to taste
  • Fresh parsley or basil for garnish

Want to level it up? Add mushrooms, spinach, or chopped bell peppers.

Prep

Slice zucchini in half lengthwise.

Scoop out the center with a spoon, leaving a small border to create a “boat.”

Lightly salt and set aside while you prepare the filling.

Make the Filling

Heat olive oil in a skillet.

Sauté onion and garlic until fragrant.

Add ground beef (or sausage) and cook until browned.

Stir in marinara, Italian seasoning, red pepper flakes, salt & pepper.

Simmer 3–5 minutes.

Grill Method (Recommended!)

Preheat grill to medium (around 375–400°F).

Brush zucchini with olive oil.

Grill cut side down for 3–4 minutes to soften slightly.

Remove, fill with meat mixture, and top with cheese.

Close lid and grill 8–12 minutes until zucchini is tender and cheese is melted.

Oven Method

Preheat oven to 375°F.

Fill zucchini boats and top with cheese.

Bake 18–22 minutes until tender.
