If you want to give this your signature twist, season the outside of the chops generously with:
SPG-style seasoning
A light kiss of onion-forward blend
Or a touch of Sweet & Sticky for a subtle caramelized finish
(That sweet-savory combo with apples? )
Instructions
Prep the Chops
Carefully cut a deep pocket into the side of each pork chop without cutting all the way through. Pat dry and season inside and out.
Make the Filling
In a skillet over medium heat, melt butter.
Add onions and cook 2–3 minutes.
Stir in apples, garlic, and sage. Cook until slightly softened (about 4–5 minutes).
Remove from heat and mix in breadcrumbs.
Stuff & Secure
Spoon filling into each chop. Secure with toothpicks if needed.
Sear
Heat olive oil in a cast iron skillet (or on the grill over medium-high heat).
Sear chops 3–4 minutes per side until golden brown.
Finish Cooking
Add chicken broth to skillet, cover, and reduce heat to medium-low.
Cook until internal temp reaches 145°F, about 10–15 minutes.
Rest & Serve
Let rest 5 minutes before slicing. Spoon pan juices over the top.
Serve With:
Roasted sweet potatoes
Grilled asparagus
Maple glazed carrots
Or a crisp apple cider slaw
