St. Patrick’s Day Reuben Sandwich

A Reuben sandwich is perfect for St. Patrick’s Day because it highlights corned beef, one of the most traditional Irish-Ameri

can holiday foods. Here’s a great version you can make on the grill, Blackstone, or cast-iron skillet.

Ingredients

  • 8 slices marble rye bread
  • 1 lb sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup sauerkraut (drained well)
  • ½ cup Russian dressing or Thousand Island
  • 4 tbsp butter (softened)
  • Optional (Girls Gone Grillin’ twist)
  • Light sprinkle of SPG with a Kiss of Onion on the sauerkraut or beef

Instructions

  1. Heat your skillet or griddle
  2. Medium heat works best so the bread toasts without burning.
  3. Butter the bread
  4. Spread butter on the outside of each slice of rye.
  5. Build the sandwich
  6. Bread (buttered side down)
  7. Swiss cheese
  8. Corned beef
  9. Sauerkraut
  10. Russian dressing
  11. Swiss cheese

Top slice of bread (buttered side up)

Grill Cook 3–4 minutes per side until:

Bread is golden brown

Cheese is melted

Rest & slice Let sit 1 minute, then slice diagonally.

Serve With

Dill pickles

Irish chips or fries

Coleslaw

Guinness or Irish stout
