Spinach & Artichoke Stuffed Pork Chops (Girls Gone Grillin’ Style)

Ingredients

  • 4 thick-cut pork chops (bone-in or boneless, 1½–2” thick)
  • 2 tbsp Girls Gone Grillin’ SPG with a Kiss of Onion
  • 1 tbsp olive oil

Filling:

  • 1 cup spinach (fresh or thawed frozen, squeezed dry)
  • 1 cup artichoke hearts, chopped
  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella
  • ¼ cup grated parmesan
  • 2 cloves garlic, minced
  • 1 tsp lemon juice
  • ½–1 tsp Hot Hens (optional for hea)

Instructions

1. Prep the Chops

Cut a deep pocket into each pork chop (don’t cut through)

Season inside and out with SPG with a Kiss of Onion

2. Make the Filling

Mix spinach, artichokes, cream cheese, mozzarella, parmesan, garlic, lemon juice

Add Hot Hens if you want that kick

Mix until creamy and thick

3. Stuff ‘Em

Pack each chop with filling (don’t overstuff)

Secure with toothpicks if needed

4. Sear for Flavor 

Heat cast iron over medium-high

Add olive oil

Sear chops 3–4 minutes per side until golden

5. Finish Cooking

Transfer skillet to 375°F oven

Cook 12–18 minutes until internal temp hits 140–145°F

6. Rest & Serve

Rest 5–10 minutes

Remove toothpicks

Slice to show off that creamy center
