Smoked Whole Beef Tenderloin with Herb Butter Girls Gone Grillin’ Style

Elegant, smoky, and unbelievably tender—this whole smoked tenderloin is perfect for holidays, special dinners, or when you want to impress without stress.

Ingredients

  • Beef 1 whole beef tenderloin (4–6 lb), trimmed
  • Olive oil
  •  Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
  • Herb Butter
  • 1 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, chopped
  • Zest of ½ lemon
  • Salt & pepper to taste

Instructions

Preheat the Smoker

Set to 225°F. Use oak, hickory, or cherry wood for a balanced smoke.

Season the Tenderloin

Pat dry, rub lightly with olive oil, and season generously with Girls Gone Grillin’ SPG on all sides.

Smoke Low & Slow

Place tenderloin directly on the grates. Smoke until internal temp reaches:

120°F for rare

125°F for medium-rare

(Approx. 60–90 minutes depending on size.)

Make the Herb Butter

Mix all herb butter ingredients until smooth. Chill slightly so it holds shape.

Finish & Rest

Remove tenderloin, top with slices of herb butter, tent loosely, and rest 10–15 minutes.

Slice & Serve

Slice into thick medallions and spoon the melted herb butter over the top.

Girls Gone Grillin’ Tips

Want a crust? Reverse-sear quickly over high heat (grill or cast iron) for 60–90 seconds per side after smoking.

Serve with garlic mashed potatoes, grilled asparagus, or a simple arugula salad.

Leftovers make killer steak sandwiches the next day.
