Smoked Stuffed Chile Rellenos (Girls Gone Grillin’ Style)

These bring that smoky backyard BBQ flavor to a classic chile relleno—no frying, just straight fire and flavor 

Ingredients

  • 6 large poblano peppers
  • 1 lb ground beef or chorizo (or mix both )
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese (softened)
  • 1 tbsp Girls Gone Grillin’ SPG with a Kiss of Onion
  • 1 tsp Girls Gone Grillin’ Hot Hens (for heat )
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 6 slices bacon (optional but)

Toothpicks

Prep the Peppers

Place poblanos directly on the grill (medium-high heat).

Char all sides until blistered.

Remove and place in a covered bowl or bag to steam (10 min).

Peel skin, slice one side open, and remove seeds.

Make the Filling

Brown beef/chorizo with onion and garlic.

Drain excess grease.

Stir in:

Cream cheese

SPG with a Kiss of Onion

Hot Hens

Mix until creamy and combined.

Stuff & Wrap

Stuff each poblano with meat mixture.

Add shredded cheeses inside.

Close pepper and wrap with bacon (secure with toothpicks).

Smoke It

Smoker temp: 250°F

Wood: Hickory or pecan (perfect with your sauces )

Cook time: 60–75 minutes

Finish option:

Brush with your Girls Gone Grillin’ Cherry Chipotle BBQ Sauce OR Pecan Whisper BBQ Sauce during last 10 minutes for a sticky glaze.
