Smoked Focaccia Bread - Girls Gone Grillin' Style

This focaccia is fluffy inside, crispy on the edges, and loaded with flavor that belongs on the smoker.

Smoked Focaccia – Girls Gone Grillin’ Style

Ingredients

  • 1 lb focaccia dough (homemade or store-bought)
  • ¼ cup olive oil (plus more for finishing)
  • 1½ tbsp Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp fresh thyme (optional)
  • 2–3 cloves garlic, thinly sliced or roasted
  • Flaky sea salt (light sprinkle only if needed)

Optional toppings:

Cherry tomatoes

Caramelized onions

Shaved parmesan

Mozzarella pearls

Smoker Setup

Temp: 375–400°F

Wood: Apple or cherry

Pan: Cast iron skillet or heavy metal pan

(Cast iron = crispy bottom = elite focaccia)

How to Make It

Pan & Dough

Pour olive oil into the skillet

Stretch dough to fit

Flip once so both sides are coated

Dimple & Season

Press deep dimples with your fingers

Drizzle more olive oil

Sprinkle SPG with a Kiss of Onion, rosemary, thyme, and garlic

Add toppings if using

Smoke It

Place uncovered on the smoker

Cook 20–30 minutes

Rotate if needed

Done when golden and internal temp hits 190–200°F

Finish Strong

Brush with warm olive oil or garlic butter

Optional sprinkle of parmesan

Rest 5–10 minutes, then slice

Light smoke only—bread absorbs smoke fast

If browning too quickly, loosely tent with foil

Want extra crust? Finish directly over heat for the last 2–3 minutes

Pulled pork or brisket sandwich bread
