Smoked Clam & Spinach Stuffed Portobello Mushrooms' Girls Gone Grillin' Style
Ingredients
- 4 large portobello mushroom caps
- 1 can chopped clams, drained
- 2 cups fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella
- 1/4 cup parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp your Girls Gone Grillin’ SPG with a Kiss of Onion
Optional: squeeze of lemon and red pepper flakes
Panko breadcrumbs for topping
Directions
Preheat smoker or grill to 375°F.
Remove stems from mushrooms and lightly scrape the gills.
Brush mushroom caps with olive oil and season lightly with SPG.
In a skillet, melt butter and sauté garlic for 30 seconds.
Add spinach and cook until wilted.
Stir in chopped clams, cream cheese, mozzarella, parmesan, and a pinch of red pepper flakes.
Spoon mixture into mushroom caps.
Top with panko and a little extra parmesan.
Smoke for about 20–25 minutes until mushrooms are tender and tops are golden.
Optional Finishing Touch
Hit them with a tiny squeeze of lemon and fresh parsley before serving.
These would be killer alongside grilled steak, salmon, or even as a seafood appetizer platter.
