These Smoked Cheddar Biscuits are buttery, cheesy, and pick up a subtle wood-smoke flavor that makes them perfect for BBQ meals. They’re great alongside brisket, ribs, chili, or even breakfast sandwiches.
Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion (optional but great flavor)
6 tbsp cold butter, cubed
1 ½ cups shredded sharp cheddar cheese
¾ cup buttermilk
1 tbsp honey (optional)
Butter Brush
3 tbsp melted butter
½ tsp garlic powder
pinch of salt
Instructions
Preheat smoker to 375°F using mild wood like pecan, apple, or hickory blend.
Mix dry ingredients
In a bowl combine flour, baking powder, salt, and seasoning.
Cut in butter
Add cold butter and work it into the flour until crumbly.
Add cheese
Stir in shredded cheddar.
Add buttermilk
Mix just until dough comes together. Do not overmix.
Form biscuits
Pat dough to about ¾–1 inch thick and cut biscuits (or scoop rustic drop biscuits).
Smoke
Place biscuits on a parchment-lined tray or cast iron skillet and smoke for 18–22 minutes until golden.
Butter finish
Brush with melted butter mixture right when they come off the smoker.
