This version bakes one big biscuit slab and then you cut it into squares, almost like a savory biscuit cake. It’s easier for serving at events, BBQ plates, or social media trays.
Ingredients
2 ½ cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
1 tsp salt
1 tsp garlic powder
½ tsp black pepper
1 ½ cups shredded sharp cheddar cheese
6 tbsp cold butter, cubed
1 ¼ cups buttermilk

Add ½–1 tsp SPG with a Kiss of Onion to the flour mixture.
Garlic Butter Topping
4 tbsp melted butter
½ tsp garlic powder
1 tbsp chopped parsley
Instructions
1. Preheat
Smoker: 375°F (pecan, maple, or mild hickory)
Oven: 425°F
2. Mix the Dough
In a large bowl combine:
flour
baking powder
baking soda
salt
garlic powder
pepper
Cut in the cold butter until the mixture looks crumbly.
3. Add Cheese
Stir in the shredded cheddar.
4. Add Buttermilk
Pour in the buttermilk and gently mix until a thick biscuit dough forms.
Do not overmix.
5. Spread on Sheet Pan
Line a sheet pan with parchment.
Press dough evenly into a 1-inch thick rectangle.
6. Score the Squares
Using a knife or bench scraper, lightly score the dough into squares (about 3x3 inches).
This makes them easy to cut after baking.
7. Bake
Cook 18–22 minutes until the top is golden and the edges are crisp.
8. Garlic Butter Finish
Brush with garlic butter immediately after baking.
9. Cut and Serve
Follow the score lines and cut into biscuit squares.
