Beef plate ribs or beef back ribs
- Olive oil or yellow mustard (binder)
- Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
- Optional spritz: apple juice + apple cider vinegar (50/50)
- Prep
- Remove the membrane from the bone side.
- Lightly coat ribs with oil or mustard.
- Season generously with Girls Gone Grillin’ SPG on all sides.
- Let sit 30–60 minutes (or overnight, uncovered, for deeper flavor).
Smoke
Preheat smoker to 250°F (oak or hickory works great).
Place ribs bone-side down.
Smoke uncovered for 3 hours, building a nice bark.
Spritz lightly every 45–60 minutes after the first hour (optional).
Finish
Continue smoking until internal temp hits 200–205°F and probe-tender
(total time usually 5–7 hours, depending on thickness).
If bark gets too dark, loosely foil for the last stretch.
Rest & Serve
Rest 30–45 minutes wrapped loosely in foil.
Slice between bones and serve up that smoky goodness.
