Banana bread cooks beautifully on a smoker and picks up a light wood-fired flavor that makes it taste incredible. It’s perfect for a pellet smoker or grill set up for indirect heat.
Ingredients
3 ripe bananas (mashed)
½ cup melted butter
¾ cup brown sugar
2 eggs
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 tsp cinnamon (optional)
½ cup chopped walnuts or pecans (optional)
Optional (Great for your brand flavors)
You could also add a tiny pinch of your Girls Gone Grillin’ SPG with a Kiss of Onion for a subtle sweet-savory balance. It actually works surprisingly well in smoked baked goods.
Smoker Setup
Preheat smoker to 325°F
Use pecan, apple, or cherry wood for mild smoke.
Cook indirect heat only
Instructions
Prepare the batter
In a bowl mash bananas. Mix in melted butter, brown sugar, eggs, and vanilla.
Combine dry ingredients
In another bowl whisk flour, baking soda, salt, and cinnamon.
Mix together
Fold dry ingredients into the banana mixture. Stir until just combined. Add nuts if using.
Pan it up
Pour batter into a greased loaf pan.
Smoke the banana bread
Place the loaf pan on the smoker grates.
Cook 45–60 minutes until a toothpick comes out clean.
Cool
Let it rest 15 minutes before slicing.
Pro Smoker Tips
Put the loaf pan on a sheet pan if your smoker runs hot on the bottom.
Don’t oversmoke — banana bread only needs light smoke.
Brush the top with honey butter during the last 10 minutes for a glossy crust.
