Shrimp Avocado Boats- Girls Gone Grillin' Style

Ingredients
- 3 ripe avocados, halved & pits removed
- 1 lb large shrimp, peeled & deveined
- 1 tbsp olive oil
- 1–2 tsp Sassy Seafood seasoning
- Juice of 1 lime
- 1 tbsp fresh cilantro, chopped
- ¼ cup diced red onion
- ½ jalapeño, finely diced (optional heat)
- ¼ cup cherry tomatoes, diced
Cotija or feta cheese (optional garnish)
Directions
Season the Shrimp
Toss shrimp with olive oil and Sassy Seafood.
Grill
Grill over medium-high heat 2–3 minutes per side until pink and slightly charred.
Remove and chop into bite-size pieces.
Mix the Filling
In a bowl combine grilled shrimp, lime juice, cilantro, red onion, jalapeño, and tomatoes.
Build the Boats
Spoon mixture generously into avocado halves.
Finish It Off
Top with extra lime zest, cheese, or a drizzle of honey-lime crema.
