This version works great with tacos, grilled chicken, pork, seafood, or anything coming off the smoker. It has bright flavor with a little heat and a touch of smoke.
Ingredients
6 tomatillos, husks removed and rinsed
1–2 jalapeños (remove seeds for less heat)
2 cloves garlic
½ small white onion
½ cup fresh cilantro
Juice of 1 lime
½ tsp salt
Optional: pinch of Girls Gone Grillin' Sassy Seafood seasoning for extra flavor
Optional Smoky Upgrade (Highly Recommended)
Throw the tomatillos, jalapeños, onion, and garlic on the grill or smoker for about 5–7 minutes until slightly charred.
Instructions
Prep the tomatillos
Remove husks and rinse to remove the sticky coating.
Roast or grill
Grill tomatillos, jalapeños, onion, and garlic until lightly charred.
Blend
Add grilled vegetables to a blender with:
cilantro
lime juice
salt
optional Sassy Seafood seasoning
Pulse
Blend until slightly chunky (not completely smooth).
Taste & adjust
Add more salt or lime if needed.
