Scallops in Creamy White Wine Sauce with Capers

Indulge in these perfectly seared scallops enveloped in a luscious white wine cream sauce with zesty lemon and briny capers. Ingredients:
- 1 lbs. Scallops, pat dried with paper towel
- 2 tbsp coconut oil or your favorite oil
- 2 tbsp butter
- 1/2 Cup White Wine
- 1 lemon, zested and little juice from lemon
- 2 garlic cloves, minced
- 2 tbsp capers
- 1/2 cup heavy cream
- Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
Instructions:
For the Pulled Pork:
- 1. Pat scallops dry and toss with Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning blend in a large bowl.
2. Heat a large skillet over medium-high heat and add 2 tbsp of coconut oil. Once
hot, carefully place the scallops in the pan, ensuring not to overcrowd.
3. Sear the scallops for 1-2 minutes until nicely browned, then flip and cook for
another 1-2 minutes. Remove to a paper towel-lined plate.
4. Reduce heat to medium Low. Add minced garlic and 1 tbsp Spoon of Butter (more if needed) to the skillet, cooking for about 30 seconds, stirring constantly.
5. Pour in the white wine, scraping up any flavorful bits, and bring to a simmer for
about 1 minute.
6. Stir in lemon zest, capers, and heavy cream; let it simmer for another minute.
7. Turn off heat, whisk in 1 tbsp butter (more if needed) until melted. Gently return scallops to the pan, tossing them in the sauce.
Note: Serve immediately, ideally alongside your favorite steak. Or over Pasta.
