Ratatouille (Girls Gone Grillin’ Style)

A classic French vegetable dish that’s PERFECT on the grill or smoker—packed with flavor and a great way to showcase fresh veggies with your signature twist.

Ingredients

  • 1 eggplant, diced
  • 2 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 4–5 Roma tomatoes, chopped (or 1 can diced tomatoes)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika

Fresh basil (for garnish)

Grill / Smoker Instructions

Preheat your grill or smoker to 375°F (medium heat).

Sauté base (optional but worth it):

In a cast iron skillet, heat olive oil and cook onion + garlic until fragrant.

Build the flavor:

Add eggplant, peppers, zucchini, and squash. Toss well.

Season it up:

Add thyme, oregano, smoked paprika, and a generous shake of SPG with a Kiss of Onion.

Add tomatoes:

Stir in tomatoes and let everything combine.

Cook:

Place skillet on grill/smoker

Cook uncovered for 25–35 minutes

Stir occasionally until veggies are tender and slightly caramelized

Add a light kiss of smoke (apple or cherry wood works )

Want it heartier? Toss in grilled sausage or shredded chicken

Finish with a drizzle of balsamic glaze for a sweet tangy pop

Serve It With
