Potato & Lobster Salad (Girls Gone Grillin’ Style)

A rich, creamy lobster potato salad that works great for backyard grilling nights, seafood cookouts, or as a side with smoked steaks or grilled fish.

Ingredients

  • 1 lb small red potatoes, quartered
  • 1–1½ cups cooked lobster meat, chopped
  • ½ cup celery, diced
  • ¼ cup red onion, finely diced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped

Dressing

½ cup mayonnaise

1 tbsp Dijon mustard

1 tbsp lemon juice

1 tsp lemon zest

½ tsp Girls Gone Grillin’ SPG with a Kiss of Onion

¼ tsp paprika

Salt & pepper to taste

Instructions

Cook the potatoes

Boil potatoes in salted water until fork-tender (about 10–12 minutes). Drain and cool slightly.

Make the dressing

In a bowl whisk together mayo, Dijon, lemon juice, zest, SPG seasoning, paprika, salt, and pepper.

Build the salad

Add potatoes, lobster, celery, onion, dill, and chives to a large bowl.

Toss gently

Fold in dressing carefully so the lobster stays chunky.

Chill

Refrigerate for 30–60 minutes before serving.

Optional Girls Gone Grillin’ Twist 

Add grilled corn kernels for sweetness.

Mix in crispy bacon bits.

Finish with a light sprinkle of Sassy Seafood seasoning.

Serving Ideas

Serve beside smoked ribeye or grilled filet

Spoon onto butter-toasted brioche rolls for lobster salad sliders

Plate in lettuce cups for a lighter option.
