A Pesto Meatball Sub is a bold twist on the classic meatball sandwich. Instead of marinara, rich basil pesto brings bright herb flavor that pairs perfectly with juicy meatballs and melted mozzarella. This is a great way to highlight Girls Gone Grillin’ SPG with a Kiss of Onion in the meatballs.
Ingredients
1 lb ground beef (or beef/pork mix)
1 egg
½ cup breadcrumbs
¼ cup grated Parmesan
1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion
2 tbsp chopped parsley
1 cup basil pesto
1 cup shredded mozzarella or provolone
4 hoagie rolls
Olive oil
Optional: sliced tomatoes or roasted red peppers
Instructions
1. Make the Meatballs
In a bowl combine:
ground beef
egg
breadcrumbs
Parmesan
parsley
SPG with a Kiss of Onion
Mix gently and form into 1½-inch meatballs.
2. Cook the Meatballs
You can:
Smoke them at 250°F for about 45 minutes, or
Bake at 375°F for 20–25 minutes until cooked through.
3. Toss in Pesto
Warm the pesto slightly and coat the meatballs so they’re fully covered.
4. Build the Subs
Place meatballs in hoagie rolls, spoon extra pesto over them, and top with mozzarella.
5. Melt the Cheese
Place under the broiler or on the grill until the cheese is bubbly.
