Ingredients
- 2 duck breasts (skin-on)
- ½ cup finely chopped pecans
- 1 tbsp brown sugar
- 1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion
- ½ tsp smoked paprika
- 1 tbsp butter
- 1 tbsp olive oil
- Optional glaze:
- ¼ cup pecan syrup or maple syrup
- 2 tbsp bourbon (optional)
- 1 tbsp Dijon mustard
- 1 tbsp butter
Prep
Score the duck skin in a crosshatch pattern (do not cut into the meat).
Pat dry thoroughly to ensure crispy skin.
Season both sides with SPG and smoked paprika.
Cook
Place duck breasts skin-side down in a cold pan.
Turn heat to medium and slowly render the fat (about 6–8 minutes).
Once the skin is crispy and golden, flip.
Cook another 3–5 minutes for medium-rare, adjusting to preferred doneness.
Pecan Crust Finish
Mix pecans and brown sugar.
Press onto the meat side after flipping.
Add butter to the pan and baste the duck for 1–2 minutes.
Optional Glaze
In a small pan, simmer syrup, bourbon, Dijon, and butter until slightly thickened. Spoon over sliced duck before serving.
