Lemon Herb Chicken (Girls Gone Grillin’–style)

Bright, fresh, and packed with flavor—this lemon herb chicken works beautifully on the grill or in a cast-iron skillet.

Ingredients

  • 4 chicken breasts or thighs
  • Zest + juice of 2 lemons
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp fresh rosemary, finely chopped (or ½ tsp dried)
  • Optional: pinch of red pepper flakes

Instructions

Marinate

Whisk lemon zest, lemon juice, garlic, olive oil, salt, pepper, oregano, thyme, and rosemary. Add chicken and marinate 30 minutes–4 hours.

Cook

Grill: Preheat to medium-high. Grill chicken 5–7 minutes per side until internal temp hits 165°F.

Cast Iron: Heat skillet over medium-high with a little oil. Sear chicken 4–5 minutes per side. Lower heat, cover, and finish until cooked through.

Finish Spoon pan juices over the chicken and add a squeeze of fresh lemon before serving.
