Lamb Chops with Blueberry & Rosemary Sauce-Girls Gone Grillin’ Style

Juicy, perfectly grilled lamb chops topped with a sweet-savory blueberry rosemary sauce. This one’s elegant enough for guests but easy enough for a weeknight flex 

Ingredients

  • Lamb Chops
  • 8 lamb rib or loin chops
  • 2 tbsp olive oil
  • 1½ tsp Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
  • 1 tsp fresh rosemary, finely chopped
  • 2 cloves garlic, minced
  • Blueberry Rosemary Sauce
  • 1 cup fresh or frozen blueberries
  • ½ cup red wine or balsamic vinegar
  • ¼ cup honey or maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp fresh rosemary, finely chopped
  • Salt & cracked black pepper, to taste
  • Optional: 1 tbsp butter (for a glossy finish)

Instructions

Prep the Lamb

Pat chops dry. Rub with olive oil, SPG, rosemary, and garlic. Let rest at room temp 20–30 minutes.

Make the Sauce

Add blueberries, wine (or balsamic), honey, Dijon, and rosemary to a saucepan.

Simmer over medium heat 10–12 minutes, lightly smashing berries until thickened.

Season to taste and swirl in butter if using. Set aside.

Grill or Sear

Grill: Medium-high heat, 3–4 minutes per side for medium-rare.

Cast-Iron: Sear 3–4 minutes per side in a hot skillet.

Internal temp: 130–135°F (rest 5 minutes).

Serve

Spoon warm blueberry rosemary sauce over lamb chops. Garnish with fresh rosemary or extra blueberries.
