These crispy smashed potatoes with Irish cheddar are perfect for your Irish BBQ menu or St. Patrick’s themed cook. They get crispy on the outside, creamy inside, and the sharp Irish cheddar melts into every crack. Finishing with green onions makes them pop with flavor.
Ingredients
1½ lbs baby Yukon gold potatoes
2 tbsp olive oil or melted butter
1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion
1 cup shredded Irish cheddar
2 tbsp sour cream (optional drizzle)
2 tbsp chopped green onions
Optional: crispy bacon bits
Instructions
1. Parboil the potatoes
Bring salted water to a boil.
Cook potatoes 15–18 minutes until fork tender.
Drain and let steam dry.
2. Smash
Place potatoes on a cast iron skillet or sheet pan.
Use the bottom of a glass to gently smash them.
3. Season
Drizzle with olive oil or butter.
Sprinkle with SPG with a Kiss of Onion.
4. Crisp
Roast or grill at 425°F for 20–25 minutes until golden and crispy.
5. Cheese finish
Sprinkle Irish cheddar on top.
Cook another 3–5 minutes until melted.
6. Garnish
Top with green onions and a drizzle of sour cream.
