Irish Cheddar Scalloped Potatoes with Green Onions

Creamy, cheesy scalloped potatoes made with sharp Irish cheddar and fresh green onions. This dish is perfect next to smoked brisket, steak, or even your Smoked Irish Beef Stew.

Ingredients

  • 3 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups Irish cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 4 green onions, sliced
  • 1½ tsp Girls Gone Grillin’ SPG with a Kiss of Onion
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional)
  • ½ cup grated parmesan (for the crust)

Instructions

1. Prep

Preheat oven or grill to 375°F.

Butter a cast-iron skillet or baking dish.

2. Make the Cream Base

In a saucepan:

Melt butter.

Add garlic and cook 30 seconds.

Stir in cream and milk.

Add SPG with a Kiss of Onion, pepper, and paprika.

Simmer 3–4 minutes.

3. Layer

In the skillet:

Layer potatoes.

Sprinkle Irish cheddar + green onions.

Pour some cream mixture.

Repeat layers until everything is used.

4. Bake

Top with remaining cheddar and parmesan.

Bake 45–60 minutes until:

potatoes are tender

top is golden and bubbly.

Finish

Let rest 10 minutes so the sauce thickens.

Top with:

extra green onions

cracked pepper.
