Healthy January Snack Grilled Cod with Chimichurri Sauce-Girls Gone Grillin’ Style

Light, fresh, and packed with flavor—this grilled cod is perfect when you want something clean but still crave-worthy.

Ingredients

  • Grilled Cod
  • 1–1½ lbs cod fillets
  • Olive oil
  • Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
  • Lemon wedges
  • Chimichurri Sauce
  • 1 cup fresh parsley, finely chopped
  • 2 tbsp fresh cilantro (optional but great)
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 2 tbsp red wine vinegar
  • ½ cup olive oil
  • Salt & pepper

Instructions

Season the Cod

Pat cod dry. Drizzle lightly with olive oil and season both sides with GGG SPG.

Grill It

Preheat grill to medium heat (375–400°F).

Grill cod 3–4 minutes per side until flaky and opaque.

Internal temp: 145°F

Make the Chimichurri

Mix all chimichurri ingredients in a bowl. Let sit 10 minutes to let flavors bloom.

Serve

Spoon chimichurri generously over grilled cod. Finish with fresh lemon.
