How to Make It
Prep the Lamb
Pat lamb chops dry and brush lightly with olive oil.
Season generously with SPG with a Kiss of Onion, The Sweet and Sticky Plus rosemary.
Let rest at room temp for 20 minutes.
Grill the Lamb
Preheat grill to high heat (425–450°F).
Grill lamb chops 3–4 minutes per side for medium-rare.
Remove and rest 5 minutes.
Make the Blueberry Rosemary Sauce
Add blueberries, balsamic, wine, and honey to a saucepan.
Simmer over medium heat until berries burst and sauce thickens (8–10 min).
Stir in butter, rosemary, and a pinch of salt.
Finish with lemon juice if desired.
Serve
Spoon warm blueberry rosemary sauce over lamb chops.
Garnish with fresh rosemary or extra blueberries.
