Grilled Croque Monsieur (Smoker/Grill Version)

Ingredients (4 sandwiches)

  • 8 slices thick-cut bread (sourdough or brioche )
  • 8 slices ham (thick deli or leftover smoked ham = even better)
  • 2 cups shredded Gruyère (or Swiss if needed)
  • 2 tbsp butter (softened)

  • Quick Béchamel Sauce:
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 ½ cups milk
  • ½ tsp salt
  • ½ tsp SPG with a Kiss of Onion
  • Pinch of nutmeg (optional but)

Step-by-Step (Grill Method)

1. Fire up the grill

Set to medium heat (350–375°F)

Indirect heat works best

2. Make the béchamel

Melt butter in a pan (on grill side burner or stovetop)

Whisk in flour → cook 1–2 minutes

Slowly add milk, whisk until smooth & thick

Stir in seasoning + nutmeg

Should be creamy, not too thick

3. Build the sandwiches

Butter the outside of each bread slice

Inside layers:

Cheese

Ham

Light sprinkle of SPG with a Kiss of Onion

More cheese

Top with second slice

4. Grill it up

Place sandwiches on grill (or cast iron on grill)

Cook 3–4 minutes per side until golden + crispy

Move to indirect heat if needed to melt cheese fully

5. The signature finish

Spoon béchamel over the top

Add extra cheese on top

Close lid and let it melt into that gooey crust
