Grilled Chicken Pesto Sandwich 

A Grilled Chicken Pesto Sandwich is simple, fresh, and perfect for backyard grilling. It’s juicy grilled chicken layered with basil pesto, melty cheese, and toasted bread. This is a great recipe to pair with your Girls Gone Grillin’ SPG with a Kiss of Onion for extra flavor.

Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion
  • 4 slices ciabatta or sourdough bread
  • 3–4 tbsp basil pesto
  • 4 slices fresh mozzarella or provolone
  • 1 tomato, sliced
  • Fresh basil leaves (optional)
  • Butter or mayo for toasting bread

Instructions

1. Season the Chicken

Brush chicken with olive oil and season both sides with SPG with a Kiss of Onion.

2. Grill the Chicken

Grill over medium-high heat (about 400°F) for 5–6 minutes per side until the internal temperature reaches 165°F. Let rest for 5 minutes, then slice.

3. Toast the Bread

Butter or spread mayo on the outside of the bread and toast on the grill or in a skillet until golden.

4. Build the Sandwich

Layer on the bread:

pesto

grilled chicken

mozzarella

tomato

fresh basil

5. Melt & Finish

Place the sandwich back on the grill or in a panini press for 1–2 minutes until the cheese melts.
