Grilled Chicken Gyros (Girls Gone Grillin’ Style)

Serves: 4

Grill: Medium-high heat

Ingredients

  • Chicken
  • 1½ lb boneless skinless chicken thighs (or breasts)
  • 3 Tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt & pepper (or your favorite all-purpose SPG)

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ English cucumber, grated & squeezed dry
  • 1 clove garlic, minced
  • 1 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1–2 Tbsp fresh dill, chopped or Sassy Seafood Seasoning 
  • Salt to taste

For Serving

Warm pita or flatbread

Sliced tomatoes

Red onion, thinly sliced

Shredded lettuce

Optional: feta, olives

Instructions

Marinate the Chicken

Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, onion powder, garlic powder, and seasoning. Coat chicken well. Marinate 30 minutes to overnight.

Grill

Preheat grill to medium-high. Grill chicken 5–7 minutes per side until nicely charred and internal temp hits 165°F. Rest 5 minutes, then slice.

Make Tzatziki

Stir all sauce ingredients together. Chill at least 15 minutes for best flavor.

Assemble

Warm pita, add sliced chicken, veggies, and a generous drizzle of tzatziki. Finish with feta if using.

Pro Tips

Thighs = juicier, more authentic gyro vibe.

Add a quick charred lemon on the grill and squeeze over the chicken.

Turn it into a gyro bowl with rice or chopped romaine.
