Grilled Cheese with Crispy Apples & Spinach

This one is sweet, savory, crispy, and melty all in one bite  Perfect for brunch, lunch, or a cozy weeknight dinner.

 Ingredients

  • 4 slices sourdough or thick white bread
  • 1 crisp apple (Honeycrisp or Granny Smith), thinly sliced
  • 1 cup fresh spinach
  • 4 slices sharp white cheddar (or Gruyère)
  • 2 tbsp butter (softened)
  • Pinch of salt
  • Optional: drizzle of honey or hot honey

Instructions

Crisp the Apples

In a skillet over medium heat, melt a small amount of butter.

Add apple slices in a single layer and cook 1–2 minutes per side until lightly caramelized and slightly softened.

Sprinkle with a tiny pinch of salt.

Wilt the Spinach

In the same pan, toss in spinach and cook 30–60 seconds until just wilted. Remove and set aside.

Build the Sandwich

Butter one side of each bread slice.

On the unbuttered side layer:

Cheese

Crispy apples

Spinach

More cheese

(Cheese on both sides helps it melt evenly.)

Grill It

Cook in a skillet over medium-low heat 3–4 minutes per side until golden brown and melty.

Slice & Serve

Rest 1 minute, slice, and drizzle with a little honey if you want that sweet heat finish.
