Green Chile Chicken Enchiladas
A creamy, slightly spicy enchilada that’s perfect for the oven or even finished on the smoker for extra flavor.
Ingredients
- 2 cups shredded cooked chicken (rotisserie works great)
- 1½ cups shredded Monterey Jack cheese
- ½ cup shredded cheddar cheese
- 1 cup sour cream
- 1 (4 oz) can diced green chilies
- 1½ cups green enchilada sauce
- ½ cup diced onion
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp Girls Gone Grillin’ SPG with a Kiss of Onion
- 8 small flour or corn tortillas
- Fresh cilantro (optional)
Instructions
Preheat oven to 375°F.
Make the filling
In a bowl mix:
shredded chicken
½ cup enchilada sauce
sour cream
green chilies
onion
garlic powder
cumin
SPG with a Kiss of Onion
1 cup Monterey Jack cheese
Fill tortillas
Spoon filling into tortillas, roll them up, and place seam-side down in a greased baking dish.
Add sauce & cheese
Pour remaining enchilada sauce over the top and sprinkle with remaining Monterey Jack and cheddar.
Bake
Bake uncovered for 20–25 minutes until bubbly and golden.
Serve
Top with cilantro, sour cream, or avocado slices.
Optional Smoker Method
Assemble the enchiladas in a cast iron skillet or foil pan.
Place on a smoker at 300°F for about 30 minutes.
Let the smoke lightly flavor the sauce and cheese.
