Gorgonzola-Crusted Bone-In Ribeye

Girls Gone Grillin’ Style with SPG with a Kiss of Onion

Bold crust. Creamy bite. Steakhouse energy at home.

Ingredients

  • 1 thick bone-in ribeye (1½–2 inches thick)
  • 1½–2 tsp SPG with a Kiss of Onion
  • 1 tbsp high-heat oil
  • 2 tbsp butter
  • 2 cloves garlic, smashed
  • ½ cup crumbled Gorgonzola cheese
  • 2 tbsp softened butter (for crust mix)
  • 1 tbsp fresh parsley, chopped
  • Optional: pinch red pepper flakes

Instructions

  • Season & Sear
  • Pat steak dry.
  • Season generously with SPG with a Kiss of Onion on all sides.
  • Heat cast iron skillet until smoking.
  • Add oil and sear 2–3 minutes per side.
  • Sear edges too for that full crust.
  • Butter Baste
  • Lower heat to medium.
  • Add butter and garlic.
  • Spoon the melted butter over the steak for 1–2 minutes.

Cook to about 5 degrees below your target temp (you’ll finish it in the oven).

Make the Gorgonzola Crust

In a small bowl mix:

Gorgonzola

Softened butter

Parsley

Optional red pepper flakes

Spread generously over the top of the steak.

Finish Under Broiler

Place skillet under broiler 1–3 minutes

Just until the cheese melts and lightly browns.

Rest

Rest 8–10 minutes before slicing.

The salt + pepper + onion in your SPG balances the bold tang of Gorgonzola perfectly. That little onion note makes the cheese pop without overpowering the beef.
