Girls Gone Grillin’ Spanakopita (with Sassy Seafood)

Ingredients:

  • 1 package phyllo dough (thawed)
  • 1 lb spinach (cooked + squeezed dry)
  • 8 oz feta cheese (crumbled)
  • 1 small onion (diced)
  • 2 eggs
  • 2 tbsp fresh dill (or 1 tbsp dried)
  • 1–2 tbsp Girls Gone Grillin’ Sassy Seafood Sprinkle 
  • ½ cup melted butter or olive oil
  • Optional: 2 cloves garlic (minced)

Directions:

1. Build the flavor base

Sauté onion (and garlic if using) in a little oil until soft and fragrant.

2. Mix the filling

In a bowl combine:

Spinach

Feta

Eggs

Dill

Onion mixture

Sassy Seafood Sprinkle (start with 1 tbsp, taste, add more if you want that pop)

3. Layer it up

Brush a cast iron skillet or baking dish with butter/oil

Add 6–8 sheets of phyllo, brushing each layer

Spread the filling evenly

Top with another 6–8 layers of phyllo (butter each layer)

4. Score before cooking

Cut into triangles before baking (game changer for clean slices)

Grill/Smoker: 375°F indirect heat

OR Oven: 375°F

Cook 35–45 minutes until golden, crispy, and flaky
