Preheat your grill to 375–400°F.

Score the fat cap in a crosshatch pattern.

Season generously with salt and pepper.

Place fat-side down and grill 5–7 minutes until the fat is crisp and rendered.

Flip and cook 3–5 minutes per side until the internal temperature reaches 125–130°F for medium-rare.

While the steak cooks, melt butter in a small skillet. Add garlic and cook 1–2 minutes until fragrant. Stir in parsley.

Rest the steak for 10 minutes.

Slice against the grain and drizzle generously with the garlic butter.
