Filet Mignon with Creamy Shallot Sauce (Girls Gone Grillin’ Style)
This is steakhouse-level but easy to execute—and your seasonings take it over the top Ingredients
For the steak:
- 2 filet mignon steaks (6–8 oz each)
- 1–2 tsp SPG with a Kiss of Onion
- 1 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, smashed
- Fresh thyme or rosemary
- For the creamy shallot sauce:
- 2 shallots, finely diced
- 1/2 cup beef broth
- 1/2 cup heavy cream
- 1/4 cup dry white wine (optional but)
- 1 tbsp Dijon mustard
- 1 tbsp butter
- Salt & pepper to taste
Instructions
1. Season & Sear
Pat steaks dry
Season generously with SPG with a Kiss of Onion
Heat cast iron skillet until HOT
Add oil, then sear steaks 2–3 min per side
2. Baste for Flavor
Add butter, garlic, herbs
Tilt pan and spoon butter over steaks for 1–2 minutes
Remove and rest (VERY important)
3. Build That Sauce
In same pan, add shallots and cook until soft
Deglaze with wine (or broth)
Add beef broth → reduce slightly
Stir in cream + Dijon
Simmer until thick and silky
Finish with butter
Optional kick: tiny pinch of Hot Hens for a subtle heat
Serve It Up
Slice filet or serve whole
Spoon creamy shallot sauce over top
Garnish with fresh herbs
