Filet Mignon with Cowboy Butter

Ingredients

• Filets
• 4 filet mignon steaks (6–8 oz each)
• 1 tbsp olive oil
• 1 tbsp Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning
• 1 tsp Girls Gone Grillin’ Hot Hens BBQ seasoning
• Cowboy Butter
• 1 stick unsalted butter, softened
• 2 cloves garlic, minced
• 1 tbsp Dijon mustard
• 1 tbsp fresh parsley, chopped
• 1 tsp fresh chives, chopped
• 1 tsp lemon juice
• ½ tsp paprika
• ¼ tsp red pepper flakes
• Pinch of salt

Instructions

Mix all cowboy butter ingredients and set aside.

Preheat grill to 450–500°F.

Lightly coat filets with olive oil and season generously with SPG with a Kiss of Onion.

Grill 4–5 minutes per side for medium-rare (125–130°F internal temperature).

Remove from grill and rest 5–10 minutes.

Top each filet with a generous spoonful of cowboy butter while hot.
