Cowboy Casserole with Pulled Pork & Tater Tots 

Girls Gone Grillin’ Style — smoky, cheesy, crispy-on-top comfort food that feeds a crowd.

Ingredients

  • 3–4 cups pulled pork (smoked or leftover)
  • 1 bag (28–32 oz) frozen tater tots
  • 1 can (15 oz) corn, drained
  • 1 cup black beans (optional), drained & rinsed
  • 1 small onion, diced
  • 1½ cups shredded cheddar or Colby-Jack
  • ½ cup BBQ sauce (Cherry Chipotle or Maple Bourbon = )
  • ½ cup sour cream
  • Girls Gone Grillin’ S.P.G. Plus a Kiss of Onion BBQ seasoning

Optional kick: Hot Hens seasoning

Chopped green onions or parsley for garnish

Prep

Preheat oven to 400°F.

Lightly grease a 9×13 baking dish.

Build the Casserole

In a bowl, mix pulled pork, BBQ sauce, sour cream, onion, corn, beans, and a good shake of SPG (add Hot Hens if you want heat).

Spread mixture evenly in baking dish.

Sprinkle shredded cheese over the top.

Arrange tater tots in a single layer.

Lightly season tots with SPG.

Bake

Bake uncovered 35–40 minutes until tots are golden and crispy.

Optional: add a little more cheese during the last 5 minutes.

Finish & Serve

Garnish with green onions or parsley.

Serve with coleslaw, pickles, or a drizzle of extra BBQ sauce.

Crispy tots = hot oven, uncovered
