Chipotle Shrimp Fajitas (GGG Style)
Ingredients
Shrimp & Marinade
- 1½–2 lb large shrimp, peeled & deveined
- 2 tbsp olive oil
- 1–2 tbsp chipotle peppers in adobo, minced
- 1 tbsp adobo sauce
- Juice of 1 lime
- 2 cloves garlic, minced
- 1 tsp Girls Gone Grillin’ Hot Hens
- 1 tsp Girls Gone Grillin’ S.P.G. with a Kiss of Onion
- ½ tsp smoked paprika
Veggies
- 2 bell peppers, sliced
- 1 large onion, sliced
- 1 tbsp olive oil
- ½ tsp GGG S.P.G.
For Serving
Warm tortillas (flour or corn)
Fresh cilantro
Lime wedges
Pico, guac, or chipotle crema
Optional drizzle: cowboy butter
Marinate the Shrimp
Whisk olive oil, chipotle peppers, adobo sauce, lime juice, garlic, Hot Hens, SPG, and paprika.
Toss shrimp to coat.
Marinate 15–30 minutes only (shrimp cooks fast).
Cook It
Cast Iron (best sizzle):
Heat skillet over medium-high until hot.
Sauté peppers & onions with olive oil and SPG until charred-tender. Remove.
Add shrimp in a single layer; cook 1–2 minutes per side until opaque.
Toss veggies back in, squeeze fresh lime, remove from heat.
Grill Option:
Skewer shrimp and grill 2–3 minutes per side.
Grill veggies in a basket or foil packet.
Serve It Up
Load shrimp and veggies into warm tortillas, finish with cilantro, lime, and a tiny extra sprinkle of SPG for that final kiss

Hot Hens brings heat—use ½ tsp for milder fajitas
Add sliced poblanos or jalapeños for extra fire
