Cheesy Potatoes & Smoked Sausage

Ingredients
- 14–16 oz smoked sausage (kielbasa or andouille), sliced
- 1½–2 lbs baby potatoes (gold or red), halved or quartered
- 1 tbsp olive oil
- 2 cloves garlic, minced

- 1–1½ cups shredded cheese (cheddar, Colby-Jack, or mozzarella)
- Optional add-ins: diced onion, bell peppers
Optional garnish: chopped parsley or green onions
Skillet Method
Parboil potatoes in salted water 8–10 minutes until just fork-tender. Drain well.
Heat a large skillet over medium-high with olive oil.
Add sausage slices and brown 3–4 minutes per side. Remove and set aside.
Add potatoes to the same skillet, cut-side down.
Season generously with SPG (and Hot Hens if using).
Cook potatoes 6–8 minutes, turning to get golden and crispy.
Add garlic and sausage back to skillet; stir 30 seconds.
Sprinkle cheese evenly over everything.
Cover and cook 2–3 minutes until cheese is fully melted.
Oven Finish (Optional )
Transfer skillet to oven and broil 1–2 minutes for bubbly, lightly browned cheese.
Serve It With
