Cast-Iron Skillet Fried Green Tomatoes 

Crispy, tangy, and perfectly golden, fried green tomatoes are one of the best things you can cook in a cast-iron skillet. Cast iron keeps the heat even and gives you that classic Southern crust.

Ingredients

  • 3–4 firm green tomatoes
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 eggs
  • ½ cup buttermilk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Oil or bacon grease for frying
  • Optional Girls Gone Grillin’ twist:
  • Add SPG with a Kiss of Onion to the cornmeal mixture for extra flavor.

Instructions

1. Slice the tomatoes

Cut tomatoes into ¼–½ inch slices.

2. Prepare the dredge

Bowl 1: Flour, salt, pepper

Bowl 2: Eggs + buttermilk

Bowl 3: Cornmeal, paprika, garlic powder

3. Coat the tomatoes

Dredge in flour

Dip in egg mixture

Press into cornmeal mixture

4. Heat the cast-iron skillet

Add about ½ inch oil or bacon grease and heat to medium-high (around 350°F).

5. Fry Cook tomatoes 2–3 minutes per side until golden brown and crispy.

6. Drain Remove and place on paper towels or a wire rack.

Serve With

Ranch dressing

Remoulade

Garlic aioli

Pimento cheese

Stack the fried green tomatoes and top with:

Smoked pulled pork

Cherry Chipotle BBQ sauce

A little coleslaw

It makes an awesome Southern BBQ appetizer or sandwich filling.
