Cajun Shrimp Stuffed Jalapeños

Ingredients

  • 10–12 fresh jalapeños (halved, seeds removed)
  • 1 lb raw shrimp (peeled, deveined, chopped)
  • 4 oz cream cheese (softened)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions (chopped)
  • 1–2 tsp Cajun seasoning (or your Girls Gone Grillin’ Hot Hens)
  • 6–8 slices bacon (cut in half)
  • 1 tbsp olive oil

Optional: squeeze of fresh lime

Directions

1. Prep the peppers

Slice jalapeños in half lengthwise

Remove seeds for less heat (leave some if you want it spicy)

2. Cook the shrimp

Heat olive oil in a skillet

Add shrimp + Cajun seasoning

Cook 2–3 minutes until just pink

Chop into small pieces once cooled

3. Make the filling

In a bowl, mix:

Cream cheese

Cheddar cheese

Shrimp

Green onions

Add a squeeze of lime for a fresh kick

4. Stuff & wrap

Fill each jalapeño half generously

Wrap with bacon and secure with toothpick if needed

5. Grill or smoke

Grill at 375°F (medium heat)

Cook 20–25 minutes until bacon is crispy and peppers are tender

For extra flavor: cook on a smoker with hickory or pecan wood
