What Makes This GGG Style
SPG with a Kiss of Onion instead of plain salt & pepper
Light smoke-kissed beef (before pastry)

Ingredients
- Beef
- 2–3 lb center-cut beef tenderloin
- Olive oil
- Girls Gone Grillin’ SPG with a Kiss of Onion
- Duxelles
- 1½ lbs mushrooms (cremini or button), finely chopped
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tsp fresh thyme
- ½ tsp SPG
- Splash of Worcestershire (optional)
Wrap
8–10 slices prosciutto
2 sheets puff pastry, thawed
1 egg + splash of water (egg wash)
Smoker Setup
Temp: 225°F (beef only)
Wood: Cherry or oak (light smoke)
Finish heat: 375–400°F (smoker or oven)
Instructions
Smoke the Beef (Key GGG Move)
Coat tenderloin lightly with olive oil
Season generously with SPG
Smoke uncovered at 225°F
Pull at 115–120°F internal
Chill completely (minimum 1 hour)
This adds flavor without ruining the pastry later.
Make the Duxelles
Sauté mushrooms in butter until ALL moisture is gone
Add garlic, thyme, SPG, Worcestershire
Cool completely
Dry duxelles = crispy pastry (non-negotiable)
Wrap It Up
Lay prosciutto on plastic wrap (slightly overlapping)
Spread cooled duxelles evenly
Place chilled beef on top
Roll tight like a log
Chill again 20–30 minutes
Puff Pastry Time
Roll out puff pastry
Unwrap beef and place on pastry
Wrap tightly, seal edges underneath
Egg wash + light scoring
Chill 20 minutes
Cook & Finish
Cook at 275–300°F indirect
No extra smoke now
Pull beef at 125–128°F
Crank heat to 400°F
Finish until pastry is deep golden and beef hits 130–135°F
Rest & Slice
Rest 10–15 minutes
Slice with sharp knife
