Baked Crispy Flounder with Apple Coleslaw 

A light, crispy seafood dish that’s perfect for backyard dinners or a fresh summer meal. The flaky flounder pairs perfectly with a crunchy apple slaw. You could easily add a touch of Girls Gone Grillin’ Sassy Seafood seasoning to bring a little extra flavor to the fish.

Ingredients

  • Crispy Flounder
  • 4 flounder fillets
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp Girls Gone Grillin’ Sassy Seafood seasoning (optional but great!)
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • 2 eggs, beaten
  • 2 tbsp olive oil or melted butter
  • Lemon wedges for serving
  • Apple Coleslaw
  • 2 cups shredded cabbage (green or mix)
  • 1 crisp apple, julienned or thinly sliced
  • ¼ cup shredded carrots
  • 2 tbsp chopped green onions

Dressing

  • ¼ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

1. Prepare the Slaw

In a large bowl combine cabbage, apples, carrots, and green onions.

Whisk together mayo, apple cider vinegar, honey, salt, and pepper.

Toss with the cabbage mixture and refrigerate while you cook the fish.

2. Prep the Flounder

Preheat oven to 425°F.

Line a sheet pan with parchment and lightly grease.

Mix panko, Parmesan, paprika, garlic powder, pepper, and seasoning in a bowl.

3. Bread the Fish

Dip each fillet in beaten eggs.

Press into the breadcrumb mixture until well coated.

Place on sheet pan and drizzle lightly with olive oil or butter.

4. Bake

Bake for 10–12 minutes, until the fish flakes easily and the crust is golden and crispy.

5. Serve

Plate the crispy flounder with a generous scoop of apple coleslaw and a squeeze of fresh lemon.
