Bacon-Wrapped Jalapeño Popper Stuffed Chicken 

Now we’re talking full flavor bomb — creamy, spicy, cheesy, and wrapped tight in crispy bacon. This is backyard showstopper material.

Ingredients

  • 4 large boneless, skinless chicken breasts
  • 4 oz cream cheese (softened)
  • 1/2–3/4 cup shredded sharp cheddar
  • 2–3 fresh jalapeños, diced (remove seeds for less heat)
  • 8–12 slices bacon (2–3 per breast)
  • 1–2 tbsp olive oil
  • 1–2 tbsp all-purpose seasoning (SPG style works great)
  • Optional: green onions or extra shredded cheese for topping

Instructions

Butterfly & Season

Butterfly each chicken breast and lightly pound to even thickness.

Lightly oil and season inside and out.

Make the Filling

Mix together:

Cream cheese

Cheddar

Jalapeños

Spoon evenly into each chicken breast and fold closed.

Wrap in Bacon

Wrap each stuffed breast tightly with 2–3 slices of bacon, slightly overlapping.

Secure with toothpicks if needed.

Grill Method (Best Flavor)

Preheat grill to 375°F

Cook indirect for 20–25 minutes

Finish over direct heat to crisp bacon

Internal temp: 165°F

Smoker Method (Girls Gone Grillin’ Vibes)

Smoke at 250°F for 60–75 minutes

Raise heat to 375°F for last 10 minutes to crisp bacon

Extra Flavor Boost

Brush bacon lightly with a sweet heat glaze in the last 5 minutes

Add pepper jack instead of cheddar for more kick

Sprinkle extra seasoning on the bacon before cooking
